A road trip across Wales has inspired a new generation of producers to tap into the fermentation boom, offering a unique and ancient process to enhance gut health. Anna Lloyd, from Anglesey, began fermenting vegetables at home using surplus cabbage from her father's allotment, initially motivated by the taste rather than the health benefits. However, she soon discovered the ancient origins of fermentation and its importance for gut health, which led to the creation of her business, Bwblin, in 2025. She now produces small-batch organic wild ferments using seasonal produce, and her products are popular across age groups, with children often being the most enthusiastic tasters. Many everyday foods, from yogurt and cheese to coffee and chocolate, are fermented in some way, and Anna spends much of her time explaining this to customers. Further south in Ceredigion, the Chuckling Goat has seen rapid growth, supplying over 120,000 customers across the UK with goat's milk kefir, a fermented dairy drink rich in live bacteria. The business has also diversified into microbiome testing, offering personalized dietary advice based on gut health. Co-director Shann Jones, a self-described 'American city girl who fell in love with a Welsh farmer', discovered kefir when her son developed eczema and bronchial issues after repeated rounds of antibiotics. The family-run farm now produces hypoallergenic goat's milk, which has helped her son's health issues. In Conwy, kombucha producer Blighty Booch has also seen rising demand, with founder Mark Pavey believing that fermented foods were gradually pushed out of everyday diets by convenience food and supermarket economics. He sees fermented foods as the 'missing link' and makes his craft kombucha from high-quality tea, proud of the flavor. However, supermarkets have side-lined properly fermented products in favor of cheap, shelf-stable, ultra-processed options.
